Carrot Cake Bites

Slightly sweet and packed with healthy ingredients my kids love these for an afterschool snack!

INGREDIENTS
3 medium carrots
6 medium dates, Medjool
1/2 cup pecans, chopped
1 tablespoon of almond butter
1 cup oats, dry
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon sea salt
INSTRUCTIONS
1. Cut up the carrots into small pieces and then add them to a food processor and process until finally ground. Transfer them to a plate or bowl and return the food processor bowl to the base.
2. Add in the dates and pecans and process those until well mixed. Return the carrots to the food processor and add in the remaining ingredients.
3. Process until the dough forms and you can roll them easily into balls. If the mixture is too wet, add in a tablespoon or two of flaxseed meal or more oats. Roll the mixture into balls and store in an airtight container in the fridge for up to one week.
